The Alaskan Sockeye Salmon Full Flex Long
The Full Flex Long is 12 and 1/2 inches overall with a 7 inch blade, 3/8 inch wide, and a spine of only 65 to 70 mils. Thin spine plus narrow blade equals maximum flex, and the 5 and 1/2 inch handle gives you plenty of leverage to control it.
Full flex is for finish work. Skinning a fillet, trimming a belly, taking pin bones out clean. The blade will follow whatever surface you lay it against, which is either exactly what you want or completely wrong for the job, and that is why this one lives alongside the stiffer blades instead of replacing them.
The blade is 230 layers of 1095 high carbon and 15N20 nickel carbon Damascus, hardened to 59 to 62 HRC. Walnut handle, hand finished.
