The Alaskan Sockeye Salmon Medium Flex
The Medium Flex runs 12 and 1/2 inches overall with an 8 inch blade cut down to 3/8 inch wide. That narrower profile is where the flex comes from, and it changes how the knife feels the moment you pick it up.
Medium flex is the classic fillet feel. The blade bends enough to ride the contour of the bone and spring back straight, which is how you take a clean fillet off without leaving half of it behind. If you have used a fillet knife before, this is the one that will feel familiar.
The blade is 230 layers of 1095 high carbon and 15N20 nickel carbon Damascus, 59 to 62 HRC. Walnut handle with a 304 stainless bolster, 4 and 1/2 inches of handle and bolster.
